Fundim Gjepali

Fundim Gjepali was born in 1981 in Shijak, near Durres, and arrived in Italy in 1996.
His personal history marks the starting point of a gastronomic journey founded on curiosity, rigor, and attention to ingredients. Gjepali’s cuisine combines technical precision and a sensitivity to flavors. The search for ingredients guides every choice, with constant attention to quality and consistency of taste.

Between Italy and Albania

Today, Gjepali divides his work between two realities: he is the Executive Chef of Antico Arco in Rome and the Padam Boutique Hotel & Restaurant in Tirana. This dual experience enriches his vision, maintaining a strong connection with both culinary cultures. The taste is born from precise processes that respect the structure, aromas, and characteristics of each ingredient. The territory remains the guide, with raw materials that bring recognizable scents and sensations to the table.
